I visted Rita Blue Mediterranean restaurant / bar recently with a few friends. They are not vegan and so I chose this place because they have regular foods based around Mexican and Mediterranean dishes as well as a dedicated vegan menu. Rita blue is in small historic square just a few minutes from La Rambla.
The vegan menu at Rita Blue has a reasonable selection of vegan food including the famous veggie burger - which my friends preferred over a regular burger.

I asked Rita Blue waiter why they decided to put a vegan menu on. The waiter told me that in recent years they have had many more customers asking for vegan dishes, even if they were not fully vegan themselves they wanted something "light". So Rita Blue catered to the demand and created their vegan menu.
Rita Blue is known for its cocktails. They have an extensive cocktail menu which are all prepared on request at the bar.
As you can see from the photos the salad was colourful and delicious. The hummus was freshly made and the same for the guacamole.
